I just finished reading "Portrait of a Girl in a Graveyard" in Simon Clark's collection SALT SNAKE AND OTHER BLOODY CUTS. Has anyone read this story? For some reason I just can't figure out the ending. What the heck happened?

I wish I could help you, but I've never read it. But, I find that when I can't figure out endings (which is about 1 in 5 stories for me!), if I read it again several months later, it makes perfect sense. Maybe our subconscious is working on solving it the whole time.
That's why I love short stories - they are like little mysteries waiting to be solved. They seem to be more artistic and diverse in meaning than longer stories (that usually resolve themselves neatly and cohesively).
I reread the story this morning in hopes of having an answer for you, but to be honest I couldn't figure it out either. I thought that maybe since the girl had seen her head as it would look in the future, that her chopping off this other girl's head would stop her from taking that path. Of course I'm known for misinterpreting many things, so I should probably just stop
